Cardamom Infused Coconut Cashew Chia Delight

We eat with our eyes!! Healthy food does not equal compromise of flavors!

Enjoy this as breakfast/dessert/mid afternoon snack! This is heavy and filling so I often eat half and save the rest for another day!


Ingredients:

  • 3/4 cup of milk of your choice (we used coconut milk)

  • 1 ripe Honey mango

  • 10 cashews chopped

  • 1 teaspoon cardamom

  • 2 tbsp chia seeds


Instructions:

  1. Mix milk and chia. Whisk it evenly. This does take a couple of minutes.

  2. Add cardamom (1/2 of the cardamom ) and half of the finely chopped mango in this milk.

  3. Let it set for about 15-20 min.

  4. Once set, top it with the rest of the fruit and cashews.

  5. Sprinkle rest of the cardamom on the top!

Other variations: you can add maple syrup for more sweetness. You can use banana or any other fruit of your choice!
