Carrot Halwa

Indian dessert anyone? Minus all the crazy unhealthy calories!

This one is family approved! I did not measure anything so giving you approximate measurements. Recipe is so easy you can adjust any of the ingredients!


Ingredients:

  • 1 cup shredded carrots (you can steam your carrots if you do not like the raw taste before blending)

  • 1 cup raw walnuts

  • 2-3 tbsp quinoa flakes

  • 2-3 tbsp of almond flour

  • 3 tbsp coconut flour

  • 6-7 pitted dates

  • 1 teaspoon of cardamom

  • 1 teaspoon of cinnamon

  • 1 teaspoon of nutmeg

  • 1 teaspoon of ginger

  • A pinch of salt

Instructions:

  1. Blend all ingredients together (because I did not add oil or water I really had to wait patiently until this blended. A food processor is much better for this!)

  2. Once it’s a sticky consistency stick it in the fridge wrapped in plastic wrap for 15-30 minutes

  3. Roll them into balls and coat them with unsweetened coconut!
