Cashew Chia Raspberry Banana Parfait

A healthy, dairy free, high in fiber parfait!

Ingredients:

  • 2 tbsp cashew yoghurt

  • 1/2 cup flax milk (creamier than almond milk)

  • Cardamom (1 teaspoon)

  • 2 tbsp chia seeds

  • 1/2 banana mashed up

  • Granola

Instructions:

  1. Mix all the above

  2. Adjust milk if needed

  3. Keep it in the fridge for an hour or overnight

  4. Top it with 1 tbsp raspberry jam and granola!

To make the raspberry jam:

Cook 1 cup frozen raspberries with water and 1/2 packet of stevia. You can use maple syrup or honey instead)


Nutrition:

  • On an average we need between 25-35 gram of fiber per day. Fiber stabilizes blood sugars, maintains healthy bowel habits and keeps us full.

  • Chia seeds are a great source of fiber (5 gm per tablespoon)

  • Highest plant based source of protein (3-4 gm protein in one tablespoon)

  • Great source of omega 3 fatty acids

  • Great source of vitamin B
