Chia Quinoa Pudding

S’mores look alike chia quinoa pudding! First time fasting for 20 hours and I so earned this! I like to start my Mondays with chocolate... This is full of yummy chocolatey flavor with different textures!
I so enjoyed this pudding! It is sweet, chocolatey, crunchy, coconutty!
Cook Your Quinoa:
1 cup of red quinoa (rinsed prior to cooking)
Boil 1 cup of almond milk and 1 cup of coconut milk (both unsweetened)
Add quinoa and cook til it’s fluffy. I lower the heat after the first boil and let it cook covered for 5-6 min and then switch it off!
This quinoa is multi purpose and will last for 5-6 days!
Ingredients For Base:
2 tbsp of coconut yoghurt
1/4 mashed bananas
1 teaspoon cinnamon
1 1/2 tbsp of chocolate flavor pea protein powder
1 teaspoon unsweetened cacao
1 1/4 tbsp of chia seeds
Instructions:
Mix and let it refrigerate
When you are ready to eat I layered them all together
Top it with few raspberries, unsweetened shredded coconut, 1 teaspoon of almond granola, and a few sweet cacao nibs!
