Chia Quinoa Pudding

S’mores look alike chia quinoa pudding! First time fasting for 20 hours and I so earned this! I like to start my Mondays with chocolate... This is full of yummy chocolatey flavor with different textures!

I so enjoyed this pudding! It is sweet, chocolatey, crunchy, coconutty!


Cook Your Quinoa:

  • 1 cup of red quinoa (rinsed prior to cooking)

  • Boil 1 cup of almond milk and 1 cup of coconut milk (both unsweetened)

  • Add quinoa and cook til it’s fluffy. I lower the heat after the first boil and let it cook covered for 5-6 min and then switch it off!

  • This quinoa is multi purpose and will last for 5-6 days!

Ingredients For Base:

  • 2 tbsp of coconut yoghurt

  • 1/4 mashed bananas

  • 1 teaspoon cinnamon

  • 1 1/2 tbsp of chocolate flavor pea protein powder

  • 1 teaspoon unsweetened cacao

  • 1 1/4 tbsp of chia seeds

Instructions:

  1. Mix and let it refrigerate

  2. When you are ready to eat I layered them all together

  3. Top it with few raspberries, unsweetened shredded coconut, 1 teaspoon of almond granola, and a few sweet cacao nibs!
