Chocolate Tofu Pudding

I use Soy in my diet at least 3-4 times a week. See below for more information on tofu and soy!

Ingredients:

  • 6 oz Sprouted / Silken Tofu (From Trader Joe's)

  • 1 banana

  • 1 1/2 tbsp unsweetened cocoa

  • 1 teaspoon ground cinnamon

  • 1-2 tbsp nut butter

  • 1/2 cup non dairy milk

  • 1 teaspoon slivered almonds

  • 1 teaspoon chocolate chips (sugar free)

  • 1 teaspoon dry shredded coconut

Instructions:

  1. Combine all ingredients in a jar

  2. Refrigerate and enjoy a guilt free dessert!

If you like it sweeter, you can add or use maple syrup/monk fruit extract/date syrup. I have not used dates myself but I heard from another fellow physician @qadirahuffmd about using dates in the recipe. I definitely will give it a try.


Tofu

  • Tofu is made from condensed soy milk

  • It’s similar to cheese making process

  • 3.5 ounces has about 70 calories, 8 gm of protein , 2 gm of carbs.

  • Contain isoflavones - 20 -24 mg of isoflavones per 3.5 ounces.

  • These function as phytoestrogens and unlike synthetic estrogen do not increase the risk of breast cancer!

  • Tofu improves heart health

  • Protective effect against breast and prostate cancer

  • Improves wrinkles and skin elasticity (40mg of soy daily)
