Cilantro Mint Chutney Zoodles

Eat your greens with this yummy zoodles recipe!

Ingredients:

  • 2 cups of zucchini noodles (From Trader Joe's)

  • 1/2 cup English peas

  • Chutney made from:

    • 1/2 cup cilantro

    • 1/4 cup mint

    • 1/2 lemon juice

    • 1/4 cup fresh grated coconut (bought from frozen section Indian store) you can use coconut milk instead

    • 1 teaspoon ginger grated

    • 1/2 Thai green chili (Thai chili is very spicy - adjust based on your spice level)

    • 1/2 cup of water

Instructions:

  1. Blend chutney ingredients with 1/2 cup water

  2. Spray one spritz of coconut oil into a pan

  3. Add zucchini noodles and peas. Roast them for a couple of minutes

  4. Add the chutney, salt to taste and cook for another 4-5 min. Cover it for a minute so they don’t get soggy

  5. Top it with half an avocado!
