Greens & Chickpeas Salad

How many vegetables can you eat in a day?

Ingredients:

  • Mixed greens

  • Baby corn

  • Snap peas

  • Carrots shredded

  • Cherry tomatoes

  • Persian cucumbers

  • Avocado

  • Cooked garbanzo beans

I used a Vegan, Gluten Free Spicy Chipotle Dressing (Eat Gud Grub). I also made a side of red lentil Peruvian pilaf from Whole Foods (High fiber and high protein)!


Instructions:

  1. Combine all ingredients together and mix in your favorite dressing.

  2. Enjoy!
