Lemon Chia Pudding

When life gives you lemons, make lemon chia pudding!

I have my favorites but this one has topped the list. One of my ways to tackle these stressful times is to meal prep and pack my favorite meals for work. This recipe is yummy and refreshing in these hot temperatures!


Ingredients:

  • 2 tbsp chia seeds

  • 1/2 - 3/4 cup cashew yoghurt

  • 1 teaspoon turmeric

  • 1 teaspoon cardamom

  • 1 mango chopped (I prefer fruits to sweeten my puddings but occasionally I will use monk fruit extract. I don’t use artificial sweeteners on a regular basis)

  • 1-2 teaspoon lemon juice

  • 1/2 teaspoon zested lemon/ lime

  • 1-2 tbsp milk (I used flax)


Instructions:

  1. Mix chia, cardamom, turmeric cashew yoghurt thoroughly

  2. Make sure turmeric is evenly mixed, otherwise it can taste bitter

  3. I added 2 tbsp flax milk to loosen it up

  4. Add mango and lemon juice and mix again

  5. Once it's all mixed up, top it with the zest

  6. Refrigerate and enjoy!
