Mango Tofu Pudding

High protein, dairy free, vegan, no added sugar pudding is ready!


Ingredients:

  • Organic super firm tofu 3 oz (From Trader Joe's)

  • 2 ripe champagne mangoes

  • 1 teaspoon ground cardamom

  • 1/2 cup flax milk

  • 1/4 cup frozen blueberries

  • 1 teaspoon chia seeds

Instructions:

  1. Blend Tofu, cardamom, flax milk and almost all of the mango (leave a few pieces for topping) in a blender and make a smooth pudding-like consistency!

  2. Top it with any fruit or any toppings!

Tip: Some people are bothered with the smell of tofu. I am not. But you can add vanilla (1 teaspoon) to the blend to mask the smell!
