Oat Bran Cinnamon Fruit Cake Pudding

Cinnamon is one of my favorite spices & I use is almost daily! Besides making the food smell amazing and taste decadent, it has several health benefits!

This dessert/ breakfast/ brunch/ snack is delicious, loaded with cinnamon and sweetened with natural fruits.


Ingredients:

  • 1 banana mashed

  • 2 TBSP Oat Bran

  • 1-2 TSP ground cinnamon

  • 1 TSP ground cardamom

  • 1 TBSPN almond butter

  • 1/2-1 cup of nut milk/flax milk

  • 1/2 cup Raspberries

  • 1/4 cup blackberries

  • 1 TBSPN frozen blueberries

  • 1 TSP coconut unsweetened

Instructions:

  1. Mix all ingredients except the blueberries and coconut.

  2. Spray pam fry in an oven proof ramekin

  3. Pour in your oat bran mixture. Should be a cake like consistency.

  4. Top with blueberries and coconut

  5. Bake at 350 degrees F For 15-20 minutes or until golden brown

  6. Enjoy!

Two types of cinnamon - Ceylon and Cassia. Cassia is the most commonly used.

🙏🏽Loaded with polyphenols which are potent antioxidants. A study compared 26 spices for their antioxidant properties and cinnamon was the clear winner even beating garlic

🙏🏽In type 2 Diabetics 1 gm or half a teaspoon is beneficial in stabilizing blood sugars.

🙏🏽Lowers LDL ( bad cholesterol) , triglycerides ( bad cholesterol) and improves HDL

🙏🏽In animal studies it improves blood pressure

🙏🏽Improves insulin sensitivity there by improving glucose metabolism

🙏🏽1-6 gm ( 2 teaspoon) of cinnamon daily has shown to reduce fasting blood sugars

🙏🏽Animal studies show cinnamon has beneficial effects in Alzheimer’s/ Parkinson’s

🙏🏽Animal studies also show a anti cancer effect


Ceylon variety is healthier than cassia. Cassia has coumarin which in large amount can be harmful. Cassia is more commonly found in stores. Try to use Ceylon variety as much as you can or low dose of cassia
