Oat Milk Cappuccino Chia Pudding

Just a fancy name for chia, coffee and oat milk!

I enjoyed this flavor so much that I made this every day for 3 days! This is a great post fast meal, filled with good fats, and is low sugar.


Ingredients:

  • 2 tbsp chia seeds

  • 1/4 cup brewed coffee

  • 1/2 cup milk (I love to use oat milk or flax milk)

  • 1-2 teaspoon monk fruit extract

  • 1 teaspoon cardamom

  • 1 tbsp nut butter (I used cashew)

  • Toppings: cacao nibs and coconut

Instructions:

  1. Mix coffee, milk, cardamom, monk fruit extract and chia

  2. Mix it thoroughly

  3. Add nut butter. Pro tip! If it’s too lumpy then microwave it to break it down so it mixes well

  4. Set it aside at room temperature

  5. Once it becomes a gel-like consistency, refrigerate it

  6. Top it with whatever your Haert desires!
