Oil-Free & Gluten-Free Banana Bread

Baking / cooking is therapeutic to me!

It distracts me from my anxiety provoking thoughts.

My sugar free, oil free gluten free banana bread is my ongoing project! My boys said this version is their favorite so far.


Problem with my baking is I don’t ever measure 🤷🏽‍♀️ The measurements here are my best guessed estimates!


Ingredients:

  • 3 ripe bananas

  • 2 eggs

  • 1/2 cup peanut butter / nut butter

  • 1/3 - 1/2 cup unsweetened cocoa

  • 1 tbsp ground cinnamon

  • 1 -2 teaspoon of date syrup

  • 1 teaspoon baking powder

  • 1 /2 teaspoon baking soda

  • 1/2 teaspoon kosher salt

  • 1 cup @hukitchen dark chocolate chunks

  • 1/2 cup chopped walnuts

  • 1 1/2 cup almond meal/ flour

  • 1/2 cup coconut flour

Instructions:

  1. Preheat the oven to 380 degrees F.

  2. In a bowl, mash the bananas and add cinnamon.

  3. Beat the eggs and add it to the bananas.

  4. Add the nut butter. Make sure it’s at room temperature so it mixes well.

  5. Add cocoa and mix well.

  6. Add both the flours, salt, baking soda and powder. Mix well. (It should be cake batter consistency. You can add more nut butter or almond milk if your mixture is dry.)

  7. Add half the chocolate chunks.

  8. Pour it in a baking pan (9.5 x 5 inch) lined by a parchment paper (You can spray pam fry on the parchment to avoid the the bread from sticking).

  9. Top the rest of the chocolate chunks and walnuts on the top of the bread.

  10. Bake the bread between 45-55 min. Check with a skewer if the bread is baked.

  11. Let it cool before you cut it!

  12. Enjoy!
