Peach & Pistachio Chia Pudding

Crunch time! No time = repeat your favorite recipe! Mondays are always crazy and I never feel prepared! I prepared this under 10 min easy chia pudding for my lunch today!

Ingredients:
2 tbsp of fat free Greek yoghurt (or any non dairy)
1 cup unsweetened coconut milk
1 small juicy peach - washed and sliced. I leave the skin on
1 teaspoon cardamom
Instructions:
Blend all the above until it becomes smoothie consistency
Place it in jar and add 2 tbsp of chia seeds. Mix it well
Place it in the fridge for at least 15-20 min
Top it with saffron and pistachios!
