Peach & Pistachio Chia Pudding

Crunch time! No time = repeat your favorite recipe! Mondays are always crazy and I never feel prepared! I prepared this under 10 min easy chia pudding for my lunch today!

Ingredients:

  • 2 tbsp of fat free Greek yoghurt (or any non dairy)

  • 1 cup unsweetened coconut milk

  • 1 small juicy peach - washed and sliced. I leave the skin on

  • 1 teaspoon cardamom

Instructions:

  1. Blend all the above until it becomes smoothie consistency

  2. Place it in jar and add 2 tbsp of chia seeds. Mix it well

  3. Place it in the fridge for at least 15-20 min

  4. Top it with saffron and pistachios!
