Rainbow food!! I can’t tell you how obsessed I am with this dish!! 3 vegetables in a bowl with no compromise on flavors!

Let's Make Our Rainbow Bowl!

  • Sweet potato baked at 385 for about 35-40 min. Peeled and chopped in small pieces.

  • Garbanzo beans washed, rinsed, and baked with my favorite chili lime spice (From Trader Joe's) You can use any spice you like! Baked at 375 for 35 min.

  • Pickled red cabbage - open the jar and take desired quantity!

  • In a bowl, add chopped sweet potato to your bottom layer and sprinkle some chili lime spice. Then add spiced garbanzo beans and top it with pickled red cabbage and cilantro!! This was so yummy!!
