Red Lentil Cumin Soup

This recipe is an example of cooking not needing to be complicated or laborious! Max wanted to eat soup today. He kept talking about Pita Jungle's lentil soup. Here is my version of that soup and let me tell you it is now going to be a staple item!


Ingredients:

  • 1 cup of dried red lentils, washed and drained

  • 1/2 cup of rice washed and drained

  • 1/2 chopped yellow onion

  • 1 1/2 tbsp cumin powder

  • 1 tsp of black pepper

  • 1 tsp salt

  • 3-4 cups of vegetable stock low sodium

  • 1/2 lemon, juiced

  • water as needed

  • 1/2 tbsp avocado oil

Instructions:

  1. Heat the oil, add onions and cook them until golden yellow. Set themaside

  2. In the same pot, add red lentils with 3 cups of vegetable stock

  3. Cover it and let it cook

  4. Once almost cooked add onions, washed rice, spices and more water. Cover the pot.

  5. Let it cook until rice is cooked.

  6. Squeeze some lemon juice and wallah
