Spicy Quinoa Cauliflower & Pistachio Mexican Bowl

This is a quick and easy dinner that is packed with flavor!
Ingredients:
Greens (Spinach/Arugula/Kale)
Spicy Salsa
Quinoa
Frozen Veggies (Cauliflower, Corn)
Avocado
Nuts (Chili Pistachios)
Instructions:
Quinoa washed and cooked in vegetable stock
Once it's almost cooked add frozen vegetables. Here, i have cauliflower and corn. You could also use edamame, beans, carrots, peas, etc.
Stir in your salsa (From Trader Joe's)
Switch off the heat and add your greens and cover the pot for the greens to cook. I like my greens crispy!
Add pre-cooked Lentils (From Trader Joe's)
Squeeze some lime or lemon juice
Top with avocado and nuts
Enjoy!
