Spicy Quinoa Cauliflower & Pistachio Mexican Bowl

This is a quick and easy dinner that is packed with flavor!

Ingredients:

  • Greens (Spinach/Arugula/Kale)

  • Spicy Salsa

  • Quinoa

  • Frozen Veggies (Cauliflower, Corn)

  • Avocado

  • Nuts (Chili Pistachios)

Instructions:

  • Quinoa washed and cooked in vegetable stock

  • Once it's almost cooked add frozen vegetables. Here, i have cauliflower and corn. You could also use edamame, beans, carrots, peas, etc.

  • Stir in your salsa (From Trader Joe's)

  • Switch off the heat and add your greens and cover the pot for the greens to cook. I like my greens crispy!

  • Add pre-cooked Lentils (From Trader Joe's)

  • Squeeze some lime or lemon juice

  • Top with avocado and nuts

  • Enjoy!
