Taco Flavored Quinoa With Spicy Salsa & Green Roasted Tofu

Not all carbs are bad! I love my fruits, beans and veggies! Not all carbs are equal! Fruits, veggies, beans and lentils also give you fiber, vitamins, nutrients!
Ingredients:
1 cup of quinoa
2 cups of water
1 can of black beans
1 tbsp of taco spice
3-4 tbsp of fresh spicy salsa
Baby kale
Firm Tofu
Zhoug Sauce (From Trader Joe's)
Optional: 1/2 avocado and cherry tomatoes
Instructions:
Wash your quinoa and then cook it in 2 cups of water. Once the water boils lower the heat and close.
Open the lid in a couple of minutes and add one can of black beans, 1 tbsp of taco spice and 3-4 tbsp of fresh spicy salsa. Mix thoroughly. Adjust your spices according to your taste.
Top it with baby kale. Switch off the heat.
Let's Make Green Roasted Tofu:
Mix together 1 tablespoon of Zhoug Sauce and half a cup of water
Pour it in a cooking pan, add the tofu, and cook
Add all ingredients together in a bowl and enjoy!
