Turmeric & Indian Spiced Quinoa Yellow Lentils "Khichdi"

Khichdi is made with rice and lentils. I replaced the rice with quinoa for complex cards, fiber and protein. I also add vegetables to make is a complete meal! I steamed green beans and cauliflower with fresh lemon juice and cilantro.


Ingredients:

  • 1 cup of washed quinoa

  • 1 cup of split yellow lentils

  • 1 tsp of turmeric

  • 1 tsp chili powder

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • 1 tsp garam masala powder

  • 1 tsp cumin seeds

  • 1 tsp coriander seeds

  • 1 tsp fresh ginger

  • 1 tsp fresh garlic

  • salt to taste

  • 1 tbsp ghee or butter

  • juice of 1 lemon

  • 2 tbsp chopped cilantro

  • steamed vegetables

Instructions:

  • Follow the recipe as shown in the video

  • The insta pot is great for this recipe!

  • Once cooked, add vegetables, lemon juice, cilantro and ghee

  • Enjoy with an Indian pickle, salad or by itself
