Turmeric & Indian Spiced Quinoa Yellow Lentils "Khichdi"

Khichdi is made with rice and lentils. I replaced the rice with quinoa for complex cards, fiber and protein. I also add vegetables to make is a complete meal! I steamed green beans and cauliflower with fresh lemon juice and cilantro.
Ingredients:
1 cup of washed quinoa
1 cup of split yellow lentils
1 tsp of turmeric
1 tsp chili powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp fresh ginger
1 tsp fresh garlic
salt to taste
1 tbsp ghee or butter
juice of 1 lemon
2 tbsp chopped cilantro
steamed vegetables
Instructions:
Follow the recipe as shown in the video
The insta pot is great for this recipe!
Once cooked, add vegetables, lemon juice, cilantro and ghee
Enjoy with an Indian pickle, salad or by itself
